Now that the apples are falling from the tree down my street, I am constantly thinking of ways to use them up. Unfortunately, I am the only one who sees the benefits of fresh apples, so there are an awful lot to use!
There is nothing better than a mixture of brown sugar, butter, eggs, flour, and fresh apples, and for this apple cake, you won’t be needing much more.
3/4 C Whole Wheat Flour
1 1/2 C White Flour
2 Tsp Baking Powder
1 Tsp Cinnamon
1/2 C Brown Sugar
1/4 C Butter, melted
2 Eggs, beaten
2/3 C Fat Free Milk
For the topping:
1 Tbsp Butter, melted
1 Tbsp Brown Sugar
Cinnamon, for topping
Mix the flour, baking soda, and cinnamon in a large bowl, then add the brown sugar. In a separate bowl, mix the melted butter, eggs, and milk. Add the wet mixture to the flour mixture and stir.This will be a very thick batter.
Pour the mixture in to a greased 8X8 pan.
Peel and core the apples, slice them in thin wedges. Press each wedge into the batter, standing upright. Brush the tops with melted butter and sprinkle brown sugar and cinnamon over the top.
Bake at 400 degrees for 40-45 minutes, until fully cooked.
