Yes, today, October 18th, 2011 is National Chocolate Cupcake Day. In addition to that, today also marks the birthday of my very closest friend. As we have been friends since 6th grade, so about 8 years, as well as living in separate states for the past 4, living very different lives, we still find time to talk to each other about every little detail in our lives, listening and loving as we always have.
These cupcakes are serving as a double whammy for me today. Yes, we all should be celebrating chocolate cupcakes today, but I am also raising my cupcake to my oldest, dearest friend. We sure have been through a lot, and I would love to be sitting in a park, eating a chocolate cupcake with none other than him today. Happy Birthday to you, my friend. Celebratory Chocolate Cupcakes
1/4 C White Sugar
1/2 C Brown Sugar
3/4 C + 2 TBSP Flour
1/4 C +2 TBSP Cocoa Powder
3/4 Tsp Baking Powder
3/4 Tsp Baking Soda
1/4 Tsp Salt
1/2 C Milk
1/4 C Saffola Oil
1 Tsp Pure Vanilla Extract
1/2 Cup Water, Boiling
Preheat your oven to 350 degrees
Mix all dry ingredients together. Add egg, milk, oil, and vanilla and beat well. Pour in boiling water, and stir the batter until combined.
Using a measuring cup, pour batter into a lined or greased cupcake pan. The batter will be very thin, which is fine.
Bake for 20-22 minutes.
Cool, then frost with your favorite icing.
