Recently I mentioned that I would be participating in the Great Food Blogger’s Cookie Swap, sponsored by Love and Olive Oil and The Little Kitchen. Since signing up, I have CONSTANTLY had cookies on the brain. Although, “the holiday season” is upon us, so hasn’t everybody?
With cookies in mind, I have been organizing a Community Wide Cookie Swap. Meaning, each participant will bring about 3 dozen cookies (or other small treats) and copies of their recipes to share with the crowd. What does this mean for all of you? Well, I’ll be collecting all of the recipes at the event, and posting them on CAKEfyi, just for you! The swap will be held November 29th, and recipe posts will follow very soon after.
Now, for those of you looking for cookie recipes for your own swap coming up, here’s one.
Oatmeal Cookies with Coconut and Dark Chocolate Chips
1 c Whole Wheat Flour
1 Tsp Baking Powder
1/2 tsp Baking Soda
1/2 Tsp Salt
2 Tbsp Butter
1/2 C White Sugar
1/2 C Brown Sugar
1/4 C Applesauce
1 Tsp Pure Vanilla Extract
1 Tsp Coconut Flavoring
1 1/2 C Oats
3/4 C Dark Chocolate Chips
1/2 C Flaked Coconut
Make the cookies!
Preheat your oven to 350 degrees.
Cream the butter and sugars. Add the egg, the applesauce, and the coconut and vanilla extracts.
Combine the flour, baking powder, baking soda, and salt. Gradually add the flour mixture to the butter mixture until a soft dough forms. Stir in the oats, chocolate chips, and coconut.
Drop tablespoons full of cookie dough on a greased cookie sheet and bake for 10-12 minutes.
