Chocolate Chip Pumpkin Cookies

Yes, I know, Fall has come and gone, Thanksgiving has passed, and now Christmas and New Year’s have too. However, pumpkin is still in stores! Yes, probably on the bottom shelf of the store, tucked away, but still!

No matter what time of year it is, I absolutely love soft, flavorful pumpkin cookies. There’s something about the flavor of the cookie, with the added chocolate chips, that just seems to make everything better! These cookies are fluffy, delicious, and a bit dangerous. I had trouble keeping my hands off of them. 🙂

Chocolate Chip Pumpkin Cookies

1/2 C Brown Sugar

1/2 C White Sugar

1/2 C Butter, softened

1 Can Pumpkin

1/4 C Applesauce, unsweetened

1/2 Tsp Pure Vanilla Extract

2 1/3 C Flour

1 Tsp Baking Soda

1 Tsp Baking Powder

1 Tsp Cinnamon

1/2 Tsp Nutmeg

1/2 Tsp Salt

1/2 C Chocolate Chips- or more

Preheat your oven to 350 degrees.

Cream butter and sugars. Add the applesauce and beat well. Add the pumpkin and vanilla and continue beating.

Combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually add the flour mixture to the butter mixture and beat until a soft dough forms. Stir in the chocolate chips.

Drop by tablespoons full on to a greased cookie sheet. Bake for 15-18 minutes.
