Cherry Chocolate M&M Cupcakes with Almond Icing

Well, here we are. We are officially one week from the day of swooning. A day of red roses, pink hearts, and chocolate…chocolate…CHOCOLATE.

I know, I know, there’s a handful of people that don’t enjoy the day. It may be too mushy-gushy for us. But for those who love it, or maybe for those who don’t, I have made these cupcakes.

These absolutely encompass the oohs and ahhs of Valentine’s Day to me. The chocolate cupcake is decadent, the M&Ms are delicious, and they are decorative as well! So whether you’re looking for a dessert to make for your sweetie, or you would rather just sit at home and eat a dozen while watching sappy movies alone, it’s up to you. Just make them.

Cherry Chocolate M&M Cupcakes

1/4 C White Sugar

1/2 C Brown Sugar

3/4 C + 2 TBSP Flour

1/4 C +2 TBSP Cocoa Powder

3/4 Tsp Baking Powder

3/4 Tsp Baking Soda

1/4 Tsp Salt

1 Egg

1/2 C Milk

1/4 C Saffola Oil

1 Tsp Pure Vanilla Extract

1/2 Cup Water, Boiling

Preheat your oven to 350 degrees

Mix all dry ingredients together. Add egg, milk, oil, and vanilla and beat well. Pour in boiling water, and stir the batter until combined.

Spoon the batter into your cupcake pan and drop 3 Cherry M&Ms into each cupcake. I used a heart shaped pan for a few of mine.

Bake for 20-22 minutes.

Once cooled, scoop a circle out of the top of each cupcake, and drop 3 more Cherry M&Ms inside.

Top with your favorite icing.

Almond Icing:

1/2 C Butter

1 1/2-2 Cups Powdered Sugar

1/2 Tsp Pure Vanilla Extract

1 Tsp Pure Almond Extract

1 Tbsp Milk

Red food coloring

Beat the butter and a 1/2 cup of powdered sugar. Add the extracts and milk and continue beating. Continue to add powdered sugar until you reach your desired consistency. Add food coloring if you’d like.
