Chocolate Coconut ‘Almond Joy’ Cupcakes

Coconut? Chocolate? Almonds? Chocolate? Coconut? YUM!

Sorry, I don’t know what else to say about these other than Y-U-M. There are no words…

Funny thing. These are actually inspired by Almond Joy chocolate bars. However, I’ve never eaten one in my life. I suppose this is my dream of what one might taste like…but ten times better. These cupcakes definitely fall under the ‘can’t stop eating category’ that I love so much. I added coconut extract, and flaked coconut to my delicious chocolate cupcake recipe. Then, I topped them with coconut buttercream icing, rolled them in more coconut, drizzled chocolate over top, and added some almonds. Here we go again…YUM!

Chocolate Coconut Cupcakes

1/4 C White Sugar

1/2 C Brown Sugar

3/4 C + 2 TBSP Flour

1/4 C +2 TBSP Cocoa Powder

3/4 Tsp Baking Powder

3/4 Tsp Baking Soda

1/4 Tsp Salt

1 Egg

1/2 C Milk

1/4 C Saffola Oil

2 Tsp Coconut Extract

1/2 Cup Water, Boiling

3/4 C Coconut, flaked

Preheat your oven to 350 degrees

Mix all dry ingredients together. Add egg, milk, oil, and coconut extract, and beat well. Pour in boiling water, and stir the batter until combined. Stir in coconut.

Spoon the batter into a lined or greased cupcake pan.

Bake for 20-22 minutes until an inserted toothpick or fork comes out clean.

Once cooled, ice with your favorite icing recipe, or the coconut icing recipe below. Pour coconut onto a plate, and dip each cupcake into the coconut. Top with melted chocolate and almonds, if desired.

Coconut Icing

1/2 C Butter

1 1/2-2 C Powdered Sugar

1 Tbsp Milk

2 Tsp Coconut Extract

Cream the butter, then add half of the powdered sugar. Add the milk and coconut extract and continue to beat. Continue to add powdered sugar until you reach your desired consistency.
