Rocky Road Oatmeal Cookies

Folks, we need to talk about ice cream. For starters, I love it. However, there are quite a few flavors that I find suspicious. Rocky Road, for example, is just plain strange to me. I’m not so sure I like the idea of chocolate ice cream with marshmallows, almonds, and often chocolate chips. I just can’t get into that.

Luckily, ice cream flavors can be made and enjoyed in cookie form. I may not like Rocky Road ice cream, but  I could surely eat a whole bowl full of these Rocky Road Oatmeal Cookies!

These cookies combine mini marshmallows, chocolate chips, and chopped almonds. Add these goodies are thrown in to a soft, chocolate oatmeal cookie and you’ve got a ridiculous, delicious blend of flavor.

Rocky Road Oatmeal Cookies

1/2 C Butter

1/2 C White Sugar

1/2 C Brown Sugar

1 Egg

1 Tsp Vanilla Extract

1 C and 2 Tbsp Flour

3 Tsp Cocoa Powder

1/2 Tsp Baking Soda

1/2 Tsp Salt

1 C Oats

1/2 C Almonds, Chopped

1 C Chocolate Chips

3/4 C Marshmallows

Preheat your oven to 350 degrees.

Cream the butter and sugar. Add the egg and extract and beat well. Add flour, cocoa powder, salt, and baking soda and beat until a soft dough forms. Stir in the oats, almonds, chocolate chips, and marshmallows. Drop by tablespoons full on to a greased cookie sheet.

Bake for 8-10 minutes until the edges begin to brown.
