My friends, spring has sprung! The tulips are blooming and the bees are buzzing. It’s here! Colors are popping!
When spring comes, I want coconut on a daily basis. Okay, maybe that happens throughout the year, but especially during the spring! These Coconut Rice Krispie Treats absolutely fill that need. And by fill a need, I may mean that I ate them for breakfast, as a snack, and as a dessert.
By simply adding flaked coconut and coconut extract to a classic favorite recipe, these beautiful bars were born. They’re so easy to make that, really, you could eat them for every meal of the day.
Coconut Rice Krispie Treats
3 Tbsp Butter
4 C Mini Marshmallows
5 C Rice Krispies Cereal
1 1/2 Tsp Coconut Extract
1/2 Tsp Vanilla Extract
1 1/2 C Coconut, flaked
In a large saucepan on low, melt the butter. Add the marshmallows, stirring continuously. Add the extracts and continue to stir. When marshmallows are fully melted, remove from heat and stir in the Rice Krispies cereal and coconut.
Press the mixture evenly into a greased or buttered rectangular pan. Top with more coconut and sprinkles, if you’d like! Let your treats sit at least 30 minutes before digging in.
